Low-Fat Chicken Parm

Low-Fat Chicken Parm
Yummy! Cheesy chicken with pasta sauce. This is the best Chicken Parm recipe I have found yet! By not breading the chicken and frying it, you cut out so much fat!

Ingredients:
4 large chicken breasts
olive oil
salt
pepper
1 cup pasta sauce
8 oz. mozzarella cheese

Directions:
1. Preheat the oven to 350° F.
2. Heat the sauce in the microwave or over the stove until hot.
3. Pound the chicken breasts until they have a uniform thickness. Season the chicken with salt and pepper. Heat enough oil to cover the pan in a nonstick pan over medium heat until hot. Sauté (or grill for even less fat) the chicken breasts until cooked through and golden, about 5 minutes on the first side and 3 minutes on the other.
4. Dip the chicken in the sauce and then add to a casserole dish. Pour remaining sauce over and top with cheese. Bake the chicken in the oven until the cheese is melted.

Creamy Chicken Enchiladas

Creamy Chicken Enchiladas


By using nonfat sour cream and yogurt, this recipe greatly reduces the amount of fat in the dish. Its yummy and healthy too! My kids loved it as long as I keep the veggies to smal peices! if they found a large piece they pulled it out! LOL! Gotta love kids!
Ingredients:
1 1/2 cups cooked chicken breast, shredded into bite-sized pieces
4 cups torn fresh spinach leaves
2 green onions, thinly sliced
1 8 oz. carton of nonfat sour cream
1/4 cup plain, nonfat yogurt
2 tablespoons whole grain flour
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/2 cup 1% milk
1 jalapeño pepper, seeded and minced
6 whole wheat tortillas, 6-8 inces in diameter
1/2 low fat shredded cheddar cheese

Directions:
1. In a medium sized saucepan, cook fresh spinach with a small amount of water, covered, for 5 minutes on medium-high heat.
2. In a large bowl, combine cooked chicken, spinach and green onions. Mix well and set aside.
3. Make the sauce: In a medium sized bowl, combine sour cream, yogurt, flour, cumin and salt. Add milk and jalapeño pepper and mix well.
4. Pour half the sauce into the chicken and spinach mixture and mix well. Divide the filling among the tortillas. Fold opposite ends of a tortilla up about 1 inch over filling then fold the left and right sides over the folded end, overlapping.
5. Place filled tortillas, seam sides down on an ungreased rectangular baking dish.
6. Spoon remaining sauce over the tortillas and bake, uncovered, in a 350° F oven for about 20 minutes or until heated through.
7. Sprinkle with cheddar cheese and let stand for 5 minutes.
8. Top with salsa and chopped green onions as desired and serve.
Serves 6
The best thing about this whole dish, is there is only 9.8 g of fat, 351 calories, 1.7 g sugars, but 36.2 g of Protein in one serving! Now that is awesome!!!

Below My target weight

WOW, one year since I started losing weight, and I am down 74 pounds!  You might have thought I have dropped off the face of this Earth, but nope, the only thing that has dropped is my weight, GLADLY!!!  Over the holidays I managed to get down to a healthy weight of 148.8.  I am happily below my target weight of 150.  I am so happy to have reached this goal.  Now my new goal....  140!  I think I will stop there.  I have also been seeing single digit sizes, and happy to report I am comfortably in 7-8's!  Can I do my happy dance now!!!  LOL!  I hope you are all doing well on your weight loss goals as well!!  I will try to update pics in later days!  Enjoy the new year all...  Happy new years!

A great Low fat, Low calorie Recipe!!!

I had to share, this recipe was too good not to! 

Honey Mustard Roasted Chicken

Rich, flavorful honey mustard chicken with carrots, squash and potatoes.

Ingredients:

1 lb. potatoes, cubed
2 lbs. chicken breasts
3 medium carrots, sliced
1small squash, cubed
2 tablespoons olive oil
1-1/2 tablespoons honey
3 tablespoons mustard
1 teaspoon rosemary
3 cloves garlic pressed
1 tablespoon season salt
1 teaspoon dried parsely
salt and pepper to taste

1. Preheat oven to 425 degrees F.

2. In a shallow pan, toss potatoes, carrots and squash with oil, season salt, salt and pepper.

3. Sprinkle peeled, pressed garlic cloves across the vegetables and scatter the rosemary and parsely on top.

4. Arrange the chicken among the vegetables and bake uncovered for 30 minutes.

5. Meanwhile, stir the mustard and honey together.

6. Remove the pan from the oven. Carefully take the chicken from the pan to another clean plate. Spread the honey-mustard mixture over the chicken.

7. Stir vegetables in the pan, return coated chicken to the pan, and place pan back into the oven. Bake 10-20 minutes, until chicken is cooked and vegetables are tender.

This is "What's for dinner tonight". Hope your family enjoys it as much as mine does!!!

And get this it only has Calories: 357,  Fat: 9 g,  Carbohydrates: 39.4 g,  and Protein: 30.5 g

LIfe is great!!!

With alot of thigns going on, I still managed to loose two pound this week... but the were the two I put on last week!  Oh well...  At least I break even.  The last 10 pounds have been a challenge to get off.  Especially with the medical problems that have arised.  I can't run now, so I am stuck to walking, of face the pain and run anyways.  so I try to do what I can.  Hopefully its enough.  I go for my 6 month appointment soon, I know its late... really late...  but at least I am going!  I will let you all know how it goes from there!  TTYL

Almost 7 months

Wow, it is hard to believe it has been that long.  As depressing as it is, I have been bouncing back and forth with weight lost.  Last week I gained 5 pounds, but this week I lost all five plus one more.  I finally been active again, so we will see what I lose now.  My cousin just posted that she wanted to have a challenge for the month of August.  This challenge is that we including herself have to lose 10 pounds before the end of the month.  I took it!  Lets see if I can lose this last 10 pounds!
