Low-Fat Chicken Parm

Low-Fat Chicken Parm
Yummy! Cheesy chicken with pasta sauce. This is the best Chicken Parm recipe I have found yet! By not breading the chicken and frying it, you cut out so much fat!

Ingredients:
4 large chicken breasts
olive oil
salt
pepper
1 cup pasta sauce
8 oz. mozzarella cheese

Directions:
1. Preheat the oven to 350° F.
2. Heat the sauce in the microwave or over the stove until hot.
3. Pound the chicken breasts until they have a uniform thickness. Season the chicken with salt and pepper. Heat enough oil to cover the pan in a nonstick pan over medium heat until hot. Sauté (or grill for even less fat) the chicken breasts until cooked through and golden, about 5 minutes on the first side and 3 minutes on the other.
4. Dip the chicken in the sauce and then add to a casserole dish. Pour remaining sauce over and top with cheese. Bake the chicken in the oven until the cheese is melted.

Creamy Chicken Enchiladas

Creamy Chicken Enchiladas


By using nonfat sour cream and yogurt, this recipe greatly reduces the amount of fat in the dish. Its yummy and healthy too! My kids loved it as long as I keep the veggies to smal peices! if they found a large piece they pulled it out! LOL! Gotta love kids!
Ingredients:
1 1/2 cups cooked chicken breast, shredded into bite-sized pieces
4 cups torn fresh spinach leaves
2 green onions, thinly sliced
1 8 oz. carton of nonfat sour cream
1/4 cup plain, nonfat yogurt
2 tablespoons whole grain flour
1/4 teaspoon ground cumin
1/4 teaspoon salt
1/2 cup 1% milk
1 jalapeño pepper, seeded and minced
6 whole wheat tortillas, 6-8 inces in diameter
1/2 low fat shredded cheddar cheese

Directions:
1. In a medium sized saucepan, cook fresh spinach with a small amount of water, covered, for 5 minutes on medium-high heat.
2. In a large bowl, combine cooked chicken, spinach and green onions. Mix well and set aside.
3. Make the sauce: In a medium sized bowl, combine sour cream, yogurt, flour, cumin and salt. Add milk and jalapeño pepper and mix well.
4. Pour half the sauce into the chicken and spinach mixture and mix well. Divide the filling among the tortillas. Fold opposite ends of a tortilla up about 1 inch over filling then fold the left and right sides over the folded end, overlapping.
5. Place filled tortillas, seam sides down on an ungreased rectangular baking dish.
6. Spoon remaining sauce over the tortillas and bake, uncovered, in a 350° F oven for about 20 minutes or until heated through.
7. Sprinkle with cheddar cheese and let stand for 5 minutes.
8. Top with salsa and chopped green onions as desired and serve.
Serves 6
The best thing about this whole dish, is there is only 9.8 g of fat, 351 calories, 1.7 g sugars, but 36.2 g of Protein in one serving! Now that is awesome!!!

Below My target weight

WOW, one year since I started losing weight, and I am down 74 pounds!  You might have thought I have dropped off the face of this Earth, but nope, the only thing that has dropped is my weight, GLADLY!!!  Over the holidays I managed to get down to a healthy weight of 148.8.  I am happily below my target weight of 150.  I am so happy to have reached this goal.  Now my new goal....  140!  I think I will stop there.  I have also been seeing single digit sizes, and happy to report I am comfortably in 7-8's!  Can I do my happy dance now!!!  LOL!  I hope you are all doing well on your weight loss goals as well!!  I will try to update pics in later days!  Enjoy the new year all...  Happy new years!

A great Low fat, Low calorie Recipe!!!

I had to share, this recipe was too good not to! 

Honey Mustard Roasted Chicken

Rich, flavorful honey mustard chicken with carrots, squash and potatoes.

Ingredients:

1 lb. potatoes, cubed
2 lbs. chicken breasts
3 medium carrots, sliced
1small squash, cubed
2 tablespoons olive oil
1-1/2 tablespoons honey
3 tablespoons mustard
1 teaspoon rosemary
3 cloves garlic pressed
1 tablespoon season salt
1 teaspoon dried parsely
salt and pepper to taste

1. Preheat oven to 425 degrees F.

2. In a shallow pan, toss potatoes, carrots and squash with oil, season salt, salt and pepper.

3. Sprinkle peeled, pressed garlic cloves across the vegetables and scatter the rosemary and parsely on top.

4. Arrange the chicken among the vegetables and bake uncovered for 30 minutes.

5. Meanwhile, stir the mustard and honey together.

6. Remove the pan from the oven. Carefully take the chicken from the pan to another clean plate. Spread the honey-mustard mixture over the chicken.

7. Stir vegetables in the pan, return coated chicken to the pan, and place pan back into the oven. Bake 10-20 minutes, until chicken is cooked and vegetables are tender.

This is "What's for dinner tonight". Hope your family enjoys it as much as mine does!!!

And get this it only has Calories: 357,  Fat: 9 g,  Carbohydrates: 39.4 g,  and Protein: 30.5 g

LIfe is great!!!

With alot of thigns going on, I still managed to loose two pound this week... but the were the two I put on last week!  Oh well...  At least I break even.  The last 10 pounds have been a challenge to get off.  Especially with the medical problems that have arised.  I can't run now, so I am stuck to walking, of face the pain and run anyways.  so I try to do what I can.  Hopefully its enough.  I go for my 6 month appointment soon, I know its late... really late...  but at least I am going!  I will let you all know how it goes from there!  TTYL

Almost 7 months

Wow, it is hard to believe it has been that long.  As depressing as it is, I have been bouncing back and forth with weight lost.  Last week I gained 5 pounds, but this week I lost all five plus one more.  I finally been active again, so we will see what I lose now.  My cousin just posted that she wanted to have a challenge for the month of August.  This challenge is that we including herself have to lose 10 pounds before the end of the month.  I took it!  Lets see if I can lose this last 10 pounds!

This is hilarious!

A little pick me up after dieting, and exercising, and running, and more exercising!

New weight goal!

So I finally reached a "within good distance" of my goal. That would be 4 pounds to be exact! I am excited, although these last few pounds, ok the last 10 have been very difficult! But then again since my hernia surgery, there is still ALOT I can't do. It hurts too bad. But I am working on it slowly. I will make it happen for sure. I will be glad to be able to run more than a mile again. I get to the mile marker, and then I have to walk, jog, and walk so more. It really sucks! But at least I am doing something!

Speaking of activity, my super sweet hubby got me my own gym equipment. I have a stairclimber, a rower (I don't know the correct name), an Ab machine, and a bicycle. So I am set! I am looking for a few more things, like weights or weight set, something along those lines... but we will see what we can find. I will post pics up soon of my new gym! I am super excited!

Wasting away!!!

But I love it!!! I know it has been so long since I updated... well since the last time I am down another 6 pounds!!! I am only 16 pounds from my goal weight!!! All since November 1st. It has been a lot of hard work, I won't deny that!!! But since November 1st, I am down 54 pounds! I have to say it feels amazing.

Week 12

Despite having a birthday party, and having family up, I am down 2 more pounds! YAY!!! I only have 2 more until I hit my next goal, I will be super excited. I survived another surgery (Gallbladder removal), but I have great support, absolutly awesome husband, who does what he can to take care of me, and a wonderful Doctor that is so great!! Although this surgery was one the simpliest, routine surgeries I have been through, I think I was in the most pain from it. I couldn't eat for a week before and nearly a week after it, because I would get sick (despite taking Zofran). But I am finally starting to feel better, a week later! I only have three more scars, instead of four, and they are small... So no biggie, not like I wear bikinis anymore anyways! So thats it for Week 12. I will post new pics next week!

week 10

Week 10!
Goal hit of 40 pounds lost!!!

This week I officially hit my mark of over 40 pounds lost! I am so excited, and never looking back!!! Will and I celebrated 8 years of being married, and I can say that it has been a wonderful 8 years! We went out to Outback (which by the way was yummy but sucks trying to find a healthy, low fat dish with small portions) for dinner, and I still managed to lose weight this week. So I must be doing something right! I found some new, low fat recipes I plan on trying this week. My kids love sea food, so I might incorporate some sea food into our diets more. If I like these recipes, I will post them on my food blog. Which can be found here! Well I hope everyone else enjoys this coming week, I will be trying to get back on schedule!!! LOL!

Week 8

Wow, week 8 already!!! I can't beleive it is already here! This past week has been pretty busy... But I managed to get in three runs, and two cardio workouts! Not bad! Wish I could've done more... but I still managed to lose 2 pounds this week!!! Slowly but surely I will be at my goal! I did manage to break that milestone I was talking about... barely today, but I did it! YAY! So here are this weeks pics! Sorry for the few, not very glamourous, it was just after a run!

These were the ones that I was saying was just after the run! Not bad for just running 2.9 miles!

Week 5,6, & 7

So I guess most of you check this thing for the pics, so we will get that part out of the way!! :) Here is what I have from the past week, enjoy!

Ok everyone, so tomorrow is week seven, and sorry for skipping week 5, but not much happened, and I was so dang busy! But I know there are people following, so I will post! :)
Week 5 and 6: Gained 2 pounds (not sure how the heck I managed it...) lost 4. So I broke even, then lost two more... I still have one more milestone I am trying to get past. I can't give you a number, but it will be a big deal for me. I haven't weighed that since before three of my babies! I only have one more pound and I am there! So I am excited, and looking forward to running it off this week! I am finding I can eat a little more. Still just a very little bit will fit, but it is more then the first and second week... Ok more than the first four weeks! LOL My kids think it is funny that mommy doesn't eat even as much as they do. In fact I still eat about half of what they do! But I guess it's ok! I had my doc run blood work this week, mainly becuase I feel so tired all the time, so I thought my iron level was off again, but he said everything is good! So we will see if it goes away with time. Well so far thats it for this week...

Video's for the surgery

to give you an idea.....

Ok so Mom left over a week ago .. It has been rough, but I am making it! So updates..... hmmm... Where to start... Well I went to the Doc's, and he cleared me for real food this week. I had gained two pounds when I was there, but I have lost those, plus two more. Who knows where it goes..... As of Sunday, I lost another inch of my tummy, as depressing as it is, I only lost 1/2 inch of my bottom, and 1/2 inch of thighs. I am thinking the 1/2 inch thing is becuase I only ran three days last week. LOL! This week however has been better. I have ran everyday since Saturday. I upped my run from 1/2 mile to a full mile. I did this because I gained two pounds last week, and wasn't happy with that number. It hasn't killed me, but some nights it hurts! But like Will says, "pain just lets you know you are still alive". I am glad he loves me! LOL! I guess thats it for now, sorry no new pics, but I haven't been able to get any good ones! I will though, adn I will post! Thanks for following, I Love the support!

The beginning of Week 4

I am finally not as sore as I have been which is good. I uped the run a bit, and still feeling good. However it has been extremely frustrating this week, because I have only lost one pound! I guess I should be glad it is one pound, but still! I want to see numbers!!! I do feel it though, all my clothes are too big and hang off now, and I finally got into pants comfortably that I haven't been able to wear for 4 years! So thats a plus! I guess thats it for this week. Will post pic next week. No big changes this week.... Thanks for checking up on me!

Week 3

Well I feel great! I haven't lost anything this week yet, but weigh-in is on Sundays. I feel like I have lost inches though. I am still really sore, but I am back to running, I was up to a mile. After that I hurt, so I have backed it down a bit. I jog about half a mile and fast-pace walk the rest of the 1.5 miles. It is enough to make me feel it, but I still don't feel like I am really working enough at it. I am going to start at the gym this coming week. With Will being gone, it is hard to stay still at home, so I am not getting the rest I wish I could. I always hear everyone say "you should take it easy", but no one else is here to do my job, and I don't need to get farther behind! So for now, I just push through, and make the best of it. The only pain I have and have had, is the one big incision. There are stitches in the muscle and I feel it everytime I use those muscles. If I sneeze, or cough, oh man it feels like I am bursting them! It does hurt, but I know in the long run it will be worth it. For now, I am happy! I am thanking God for a successful surgery, Good Doctors, and great support!
